Radish and Chive Toast

radishchivetoast6 Since I work from home for the most part, I've been really intent lately on upping my lunch game. It's so easy to fall into the routine of preparing the same thing every day, and though I really like the Amy's Soups and avocado toast combination that has become my go-to, I've decided it's time to add a little variety to the meal and find some new alternatives.

One of the things that always holds me back is time - or lack thereof. More often than not, I'm looking for something that's quick enough to whip together without much commitment, and that does tend to be limiting, especially without proper planning. After assessing the contents of my fridge one morning and finding radishes and chives among the usual suspects, I figured I could whip together a toast with those two as the feature ingredients, grabbed a baguette on my way home from a meeting, and set to work.

The addition of the ginger, sesame seeds and toasted sesame oil added a slight Asian influence and extra flavour, and these little bites were delicious as a complement to - you guessed it - my classic bowl of soup. They'd also make a great dinner app, maybe in combination with a selection of other little toasts as well, so I'm definitely going to experiment with more options.

Radish and Chive Toast // 

2 tbsp unsalted butter (room temperature) 2 tbsp chives, minced and divided 1/2 tbsp sesame seeds, toasted (plus more for garnish) 1/4 tsp fresh ginger, grated 5 radishes, thinly sliced French baguette, sliced diagonally Drizzle of toasted sesame oil Sea salt, to taste

1 // In a small bowl, combine the butter, 1 tbsp of chives, toasted sesame seeds, and grated ginger.

2 // Spread the butter mixture over each slice of bread.

3 // Top each slice of bread with 3-4 radish slices.

4 // Drizzle each slice with a tiny bit of sesame oil and garnish with remaining sesame seeds, chives, and sea salt right before serving.
