Summer Recipe Series // Strawberry Watermelon Smoothie Bowl

watermelonsmoothiebowl_1 Like many of my new relationships start these days, Lynsey and I met through the online world earlier this summer. A few coffee dates and a new friendship later, we had started dreaming up a collaboration in the form of a series of five summer recipes specially developed by Lynsey for Bicyclette readers.

With a focus on using fresh, seasonal ingredients that are available at your local market, Lynsey built the perfect simple summer menu for us, and together we styled (and taste tested!) each dish and had Jason shoot it. We'll be sharing each recipe over the next couple of weeks, starting today with our delicious breakfast option.

Barefoot in the grass, sun at your back and juice dripping down your arms, there is nothing more summer than biting into a slice of watermelon.

But eating this pink-fleshed beauty when the sun shines does more than give us that summertime feeling. High in the carotenoid lycopene watermelon helps protect our skin from sun’s damaging rays, making us less susceptible to sunburn and its wrinkle inducing effects. Lycopene is best absorbed when paired with a little fat, making this smoothie bowl the perfect addition to your morning beauty routine (topical sunscreen still suggested).

Recipe // 

1 cup strawberries, frozen (or if fresh, hulled and sliced) 1 cup watermelon, chopped 1 frozen banana 3 Tbsp hemp hearts 1 Tbsp coconut oil 1 tsp honey 1 lime, juiced 4-5 mint sprigs

Optional Toppings // 

Cacao nibs Fresh strawberries Watermelon Goji berries Roasted almond Toasted coconut Puffed millet

1 // Add all ingredients (minus the toppings) to a blender. Start to blend, streaming in water just so the mixture gets going. You want the smoothie bowl to stay thick enough to eat with a spoon.

2 // Once blended and creamy transfer to bowl(s) and top with desired toppings.

Serves 2, 1 generously.
