Watermelon Skewers with Balsamic Drizzle
One of the perks of working from home is getting to put a little more love into my lunches, and with a summer of farmer's market steals and fresh produce at my disposal, I've been taking advantage of the opportunity to whip up fresh and simple options. Though dinnertime for me is an opportunity to fully disengage from work, throw on a podcast and enjoy a glass of wine while cooking, when it comes to lunch I'm all about ease and speed.
One of my standard go-to recipes is a classic caprese salad with fresh basil picked from my little patio garden and a drizzle of olive oil, and recently I've been revamping the favourite with watermelon, mint and bocconcini, finished off with a dash of balsamic vinegar, or balsamic cream, which I happened upon in the grocery store by chance. Perfect as a complement to another dish or on its own, it's the perfect mix of sweet and savoury, and it truly is summer on a plate.
WATERMELON SKEWERS WITH BALSAMIC DRIZZLE
Watermelon, cubed
Fresh mint
Bocconcini (cocktail size pearls)
Balsamic vinegar (or balsamic cream, if you can find it)
Salt
Wooden skewers
Stack your skewers, alternating between the watermelon cubes, bocconcini pearls and mint leaves. Sprinkle with salt and drizzle with the balsamic vinegar/cream. Enjoy!
Don't have skewers on hand? Try making it as a salad instead, chopping up the mint leaves and tossing everything in a bowl.
