Trick or Treat // Marble Candy Apples

Holidays always provide the perfect excuse to dream up new recipes and projects, and with Halloween less than a week away, what better nostalgic treat to whip up than a classic candy apple? Of course we had to put our own spin on it, so we decided to try our hand at marbling.

As is often the case when trying out new recipes, I was surprised at how easy these marble candy apples were, and with a few simple ingredients that you likely have on hand and a candy thermometer, you too can whip up these pretty treats just in time for Halloween.

Ingredients // 

6 Granny Smith apples
3 cups sugar
1 cup water
1/2 cup corn syrup
1 teaspoon vanilla extract
White food colouring
2 other colours of food colouring (we used pink and peach gel colouring)
Candy thermometer
Parchment paper
Lollipop sticks

(Note: If you're wondering where to get the food colouring, thermometer and lollipop sticks, I'd recommend Bulk Barn!)

Instructions // 

1 // Prep your apples by washing and drying them, removing the stems, and inserting the lollipop sticks as far as they can go (without them popping out the other side). Get your workstation ready by placing your apples near the stove so you can grab them quickly when you need them, and cover a cookie sheet with parchment paper to keep close as well.

2 // Mix the sugar, water and corn syrup in a medium sauce pan and attach the candy thermometer to the side of the pot, ensuring it's not touching the bottom of the pan. Heat over medium high heat until the mixture reaches 300 degrees. Allow it to bubble but do not mix.

3// Once the mixture reaches the desired temperature, quickly remove from the heat, and mix in the vanilla and the white food colouring with a rubber spatula until it's combined.

4 // Quickly add in a few drops of the other two colours, gently stirring them with an extra lollipop stick, but taking care not to mix completely, achieving a marbled effect.

5 // Tip the pot to one side and dip the first apple in the candy mixture, coating it on all sides. Allow the apple to drip for a few seconds after you pull it out, and then place it on the parchment paper to cool and harden.

6 // Repeat with the rest of the apples, keeping in mind that the candy mixture hardens quite quickly, so it's important to move swiftly!
